Organic Desserts: Strawberry Shortcake

Everyone loves a traditional dessert that is quick and easy to make. Its often fun to get the kids involved. With this shortcake mixture you get great flavor and even save calories if you replace the double cream with crème fraiche. Other flavors can be created by changing the fruits used to blueberries, cherries or any other type of shortcake you enjoy!

Ingredients:

  • 175g or 3/4 cup of organic butter
  • 75g or 1/4 cup cane sugar (unprocessed)
  • 175g or 1 3/4 cup of plain flour
  • 75g or 1/2 cup ground rice

Topping:

  • 200ml or 1 cup double cream (lightly whipped) or crème fraiche
  • 250g or 1 pint of strawberries (halved)

Preheat oven to 300°F. Soften the butter and sugar in a large bowl. Once softened slowly mix in ground rice and flower until you get a soft dough-like texture. Roll out the dough on a floured surface and place it into your backing dish and place it into the oven for just over an hour or when the cake becomes a pale golden brown color. Once it has cooled down, spread your cream and drop your fruits on top. Enjoy!
